Simple and delicious recipes are very beloved by all okroshka

Okroshka is a traditional Russian dish that not only saturates, but also refreshes in hot weather. Spring is about to fully come into its own, which means it’s not so long to wait for sunny days. Prepare for the heat beforehand, having mastered several light recipes of a delicious dish.

Okroshka with beef

  • 3 liters of boiled water from the refrigerator
  • about 1 kg of boiled potatoes
  • 10 steep eggs
  • 700-800 g of boiled beef
  • 1 bunch of green onions
  • 1 bunch of dill
  • 1 bunch of parsley
  • 3-4 large cucumbers
  • 300 g of mayonnaise
  • 5 teaspoons mustard
  • 1 large lemon (you can replace 0.5 teaspoons of citric acid)

To start boil beef. Boil the water in the refrigerator. Cucumbers are peeled (smooth can be used entirely). Boiled eggs, meat, cucumbers, chopped greens are cut into cubes. This okroshka can be supplemented with dressing from a spoon of mustard, two boiled yolks, pounded in mashed potatoes and two spoons of mayonnaise.Mix vegetables and meat with dressing, and then fill with water. Boiled potatoes can be cut into okroshka along with other vegetables or put to the dish as a side dish instead of bread.

Okroshka with sausage on kvass

  • 200 g of boiled sausage
  • 150 g cucumbers
  • 200 g potato boiled in uniform
  • 4 cool eggs
  • 50 g green onions
  • dill - to taste
  • salt - to taste
  • sour cream - to taste
  • 1 l kvass

As a basis of this summer soup unsweetened kvass of natural fermentation is used. Dice boiled sausage or lean ham (can be mixed 1: 1). Add cucumbers, radishes, boiled potatoes, green onions, dill, parsley. Before pouring kvass, add a spoonful of low-fat sour cream and salt the mixture. Boiled eggs can be cut into cubes or in halves.

Okroshka with shrimps

  • 400 grams of boiled shrimp
  • 4 fresh tomatoes
  • 5 boiled eggs
  • 1 lemon juice
  • 1 bunch of dill
  • 1 bunch of green onions
  • 1 pack of mayonnaise
  • 1.5 l drinking cold water
  • salt to taste

The main rule - to use low-fat varieties of fish and seafood, which do not lose their taste in the cold state. Peel the shrimp and cut into small pieces. Add chopped boiled eggs, chopped green onions and dill.Fresh tomatoes cut into cubes and remove the juice (you can use cherry, then cut them in half). Salt the mixture and fill with cold water.

Okroshka on the basis of yogurt

  • 5-6 pcs. boiled potatoes
  • small bunch of radish
  • 2-3 fresh cucumbers
  • 5 chicken eggs (boiled)
  • 70 g green onions
  • a few sprigs of dill
  • 1 tbsp. mustard french
  • 1 liter of yogurt 2.5% fat
  • 1 tbsp. boiled chilled water
  • sour cream
  • salt
  • ground black pepper (to taste)

The simplest option was chopped green onions, filled with sour milk. But for a full meal in yogurt add eggs, chopped greens and green onions, fresh cucumbers, radish and black pepper. For a more nutritious dish, you can add diced and peeled potatoes in the uniform. Thick kefir is diluted with water.


Sometimes, for cold soups, a special vegetable broth is prepared. As a basis, you can use beets, sorrel, or even nettle leaves to choose from. Cold meat is sometimes prepared on the basis of beet tops. Leaves or vegetables are washed, boiled for at least 40 minutes, and after broth is used as a basis for okroshka. Add to the fridge familiar foods: boiled eggs, greens, cucumbers and radishes.The dish is filled with sour cream, and young potatoes are served as a garnish.
