Tea is undoubtedly one of the most popular drinks in the world. He is known to mankind for more than 12 centuries. And its variety - matcha, originates from that time. He was introduced to Japan by the monk Aizay allegedly in 1191 and began to spread rapidly among all strata of the population.

What's on the sweet?

“Matcha” in Japanese in our transcription sounds like a “match”. It is powdered green tea leaves. This type of drink is the main highlight of this traditional Japanese tea ceremony.

Collect the leaves for this tea only once a year, before it securely covering them from the sun for two weeks. Thus it is possible to preserve as much as possible the rich taste and beneficial substances.

But over time, the matches were not only brewed, but used even in cooking. A special place here is given to baking and various desserts, the recipes of which we will be happy to share with you.

Unusual ice cream

Such a dessert is impossible not to admire.And you can see this by giving them your guests. For cooking you need very few products:

  • cream (35%) - 500 ml;
  • sugar - 80-100 g;
  • yolk - 5 pcs .;
  • matcha - 2 tsp

Beat yolks with sugar with a mixer and add to hot cream. In a water bath, boil until thickened, after which, diluting slightly with water, pour tea powder into the mass.

If lumps form, the mixture will need to be ground. To transfer the received weight to a tray and to send in a freezer for 3 hours, stirring occasionally.

Refreshing meringue

Another simple recipe that even an aspiring cook can handle. The main thing is to beat the whites. Will be needed:

  • squirrels - 5 pcs .;
  • match - 4 hours;
  • sugar - 1.5 tbsp.

The powder has a rather bright and saturated taste, so you should not deviate from the proportions of the recipes, otherwise the delicacy can taste bitter. So, how to prepare tender meringues?

Everything is quite simple. Heat the proteins with sugar in a water bath until the latter is completely dissolved. It is necessary to "arm" kitchen thermometer, and carefully monitor the temperature of the mixture. An ideal indicator is not higher than 42 degrees.

Next, using a mixer, beat the proteins until a white foam appears.To be sure of the readiness, take a spoon and dial the mass, then turn it over. If the squirrels did not fall, then you did everything right.

After that, you need to add tea, mix and pour the mass into the pastry bag. Squeeze out the meringue of the form you like, decorate and send it to dry in the oven for 2 hours at a temperature of 100 degrees.

"Madeleine"

This cookie in the form of cockleshells - a classic French baked goods, conquered all lovers of sweet in the last century. Today the Madeleine cookie recipe has many different variations, and we propose to make it with the tea of ​​the match. Will be needed:

  • eggs - 3 pcs .;
  • sugar - 100 g;
  • flour - 1 tbsp .;
  • butter - 150 g;
  • matcha - 3-4 tsp;
  • vanillin or lemon peel.

Beat eggs with sugar until resistant peaks. Add to them sifted flour with tea. Put the butter, pre-melted and cooled to room temperature.

To taste, add lemon zest or vanilla. Send the dough into the refrigerator for a few hours, then pour into forms and bake for 5 minutes at a temperature of 200 degrees.

Creamy delicacy

The Japanese call it "chizukey", we have this dessert known as "cheesecake". Will be needed:

  • chocolate cookies - 150 g;
  • butter - 20 g;
  • cream cheese - 500 g;
  • egg - 3 pcs .;
  • sour cream - 1 tbsp .;
  • sugar - 1 tbsp .;
  • starch - 1 tablespoon;
  • lemon juice - 1 tsp;
  • tea powder to taste.

Cookies turn into a crumb and mix with melted butter.

Tightly lay on the bottom of the form, spreading a little on the sides. For egg stuffing, thoroughly mix with a mixture of sugar, starch and match.

In parts add cheese, sour cream and lemon juice, knead well. Pour the filling onto the base and send to the oven.

In order for the Japanese dessert not to break, there must be a sufficient level of humidity in the oven; for this, a deco with water is placed on the lower tier.

Biscuit delight

Delicate, airy sponge cake with a hint of strawberry sourness and an original match flavor. Incredibly delicious cake. It will require:

Biscuit:

  • eggs - 4 pcs .;
  • flour - 120 g;
  • sugar - 100 g;
  • match - 3 hours;
  • baking powder - ½ tsp

For cream:

  • cream - 150 ml;
  • chocolate - 200 g;
  • strawberry - 70 g

Biscuit should be baked according to the classic recipe, first beating eggs with sugar, and gradually introducing into them a mixture of the remaining dry ingredients, then sending in the oven for half an hour.

For the cream, bring the cream to boil, add the chocolate and allow to cool. After shaking with a mixer and put the chopped strawberries.

Cut the biscuit into several pieces and smear with cream. Let it soak for several hours.
